HEALTHY & QUICK: KICKIN' LONDON BROIL WITH BLUE CHEESE BUTTER

Kickin' London Broil with Blue Cheese Butter
2 pounds flank steak
1 tbsp olive oil
1 tbsp coarsely ground black pepper
1 tsp garlic salt
1 tsp onion powder
1/4 tsp cayenne pepper
3 tbsp crumbled blue cheese
2 tbsp butter, softened
1 tsp fresh chives
Pat the steak dry. Rub all over with oil. Stir together the black pepper, garlic salt,
onion powder, and the cayenne in a bowl. Rub evenly over both sides of the steak.
Mash the cheese with butter in a bowl. Stir in the chives. Preheat the broiler. Line
a large rimmed baking sheet with foil. Set an oven rack on it. Broil the steak 4 inches
from the heat until a instant read thermometer inserted into the center registers 125 F.
for medium-rare, 3 to 4 minutes per side. Allow to rest, loosely covered with the foil,
for 10-15 minutes. Cut the steak across the grain into thin slices and serve with the
cheese butter. YIELD: 6 SERVINGS
