Moroccan Carrot Salad

1/4 cup olive oil
1/4 cup lemon juice
1 tsp cumin
1 tsp chili powder
1 tsp salt
1 tsp black pepper
8 large carrots, peeled and grated (8 cups)
2 (16 ounce) cans chickpeas, drained and rinsed
1 cup raisins

Whisk together the oil, lemon juice, cumin, chili powder, salt, and pepper
in a large bowl.   Stir in the carrots, chickpeas, and the raisins.  Marinate,
covered with plastic wrap, at least 2 hours at room temperature; or up to
days, chilled.  YIELD:  8 Servings
