Concord Grape Pie

1 recipe for a 9-inch double pie crust
5 cups concord grapes1 1/4 cups white sugar
1/4 cup flour
1 pinch salt
3/4 tsp lemon juice
1 1/2 tbsp butter


Preheat the oven to 400 F.  Place a sheet pan on the lower oven rack.
Wash and stem the grapes.  Squeeze the grapes out of their skins.  Save
the skins.  Set aside. Place the grape pulp in a large saucepan.  Mash a 
few grapes at the bottom to release their juice.  Cook over medium-low
heat until the grapes com to a full boil.  Remove the pulp from the heat.
Press through a food mill to remove the seeds.  Combine the pulp and the
skins in a large bowl.  Stir in the lemon juice.  In a separate bowl, mix the
sugar, flour, and salt.  Stir into the grape mixture.  Pour the filling into the
pastry crust.  Dot with butter.  Cover with the top crust.  Flute the edges.  
Cut little slits in the top crust for steam to escape.   Bake in the preheated
oven for 45 to 50 minutes or until the crust is brown and the juice begins to
bubble through the slits in the top crust.  Cool completely.
