GMT - 6 Hours CARMEL COCONUT STARS

Caramel Coconut Stars

1 cup butter, softened
1 1/2 cups sugar
2 large eggs
3 tsp vanilla
2 3/4 cups flour
2 tsp baking powder
1/4 tsp salt
1 pkg. (11 oz.) Kraft caramel bits
2 tbsp water
1 cup flaked coconut, toasted


Cream the butter and the sugar in a large bowl until light and
fluffy.  Beat in the eggs and vanilla.  Combine the flour, baking
powder, and the salt.  Gradually add to the creamed mixture.
Mix well.  Divide the dough in half.  Shape each into a ball. Flatten
into a disk.  Wrap in plastic wrap.  Refrigerate for 1 hour.  Roll one
portion of the dough to 1/8 inch thick on a lightly floured surface.
Cut with a floured 3-inch star-shaped cookie cutter.  Place the stars
2 inches apart ongreased baking sheets.  Repeat with the remaining
dough.  Bake at 375 F.  for 6 to 8 minutes or until the edges begin
to brown.  Remove to wire racks to cool completely.  Melt the caramel
bits and the water in a microwave.  Stir until smooth.  Working with a
few cookies at a time, spread the caramel over the cookies at a time. 
Immediately sprinkle with the coconut.  Let stand until set.
YIELD:  About 3 1/2 Dozen
